Polymer fume fever or commonly known as “Teflon Flu,” is an illness that occurs when inhaling harmful fumes from Teflon or chemically treated non-stick pans. This smoke comes out when non-stick pans get too hot or burn.

In normal use, non-solid coatings are not thought to pose a health hazard, but when heated above 500 F, increased emissions and polymer fume fever result. Polymer fume fever causes a variety of reported symptoms including fever, chills, muscle stiffness and headache. Teflon allergy symptoms are temporary and usually begin within 12 hours of exposure, but may take up to 24 hours to develop.

Unlined cookware is made of polytetrafluoroethylene (PTFE). PTFEs are known as “permanent chemicals” because they can take decades, or even centuries, to break down.

Most air fryers on the market today have Teflon or non-stick baskets. They work just as well as disposable dishes because they release food easily and can be cleaned regularly with hot, soapy water. Like Teflon and nonstick cookware, air fryer baskets will crack when exposed to hard metal cookware or wire scrub brushes.

In theory, an air fryer basket can cause Teflon Flu if the surface is heated at 500°F or more for a long time, but most air fryers do not exceed 450°F for that reason. Most of the freezers we tested reach a maximum temperature of 400 F.

It is also important to avoid damaging your nonstick air fryer basket to avoid chemical particles sticking to the food. Always use soft materials, such as wood or food-safe silicone, when handling food inside the basket, and never scrub your basket with coarse sponges or wire.

What to do if your air fryer goes to 500 F

If your air fryer has a setting that allows it to reach temperatures above 500 F and a non-rigid basket, avoid cooking at high temperatures. You may consider replacing the air fryer with one that is not only safe. If it can hit 500 F, it can do so with natural temperature fluctuations and is not worth the risk.

If you’re still worried about Teflon Flu or other non-stick related issues, there are air fryers with ceramic, stainless steel and glass cooking chambers.
